Getting slime of northerns

Does anyone have a way to get the slime off northers? I caught some the other day and filleted them with in half hour of catching them. I was going to try and smoke them but took them out of the brine and they are just covered in slime.

Use old newspapers--lay them on it to gut, fillet, etc.  The newspaper absorbs the slime well.

Did you leave the skin on? I've never smoked northerns but have smoked bullheads. We always removed the skin, rinsed in cold water and never had slimy fish out of the brine.

Yes I had left the skin on. I have never smoked them either but was going to try something else besides pickling them. Might have to try it with skin off next time. It was like I was pulling the out of egg whites. My dad said next time leave them on a stringer and tie it to the bumper on the way home. Might get rid of half the slime on the buggers

Let me know how they turn out smoked. Have you tried canning any? Served on crackers or with some fried taters they are good that way too.

I just remove the skin, chunk them up and put them in ice water overnight. Never had any slime on them. If you learn to bone them, they're as fine tasting as any other favorite fish. Not that hard to bone either. Canned is also great, as mentioned above. leave the y-bones in and freeze. When you're ready, chunk them up in 1 inch cubes, put in jars with a little cooking oil and if desired a little bbq sauce, honey dijon, or ????. Pressure cook as canning fish. Great on crackers and bones dissolve in the canning process.

I have smoked a lot of northern and you definitely have to get the skin off. Then wash and rinse in cold water before you brine. Northern smokes up wonderfully!

I will try canning some next time. I left the skin on because that's how smoked salmon comes. Will take the skin off and try again some time. They turned out alright will give it another shot to see if skin off is better. Yep they are good eating frying them up but was trying to find other things to eat in the tractor besides jerky and pepper sticks

I heard somewhere is a defense mechanism due to stress. I heard that if u slit the gills right when u catch them that they are not that slimey. Therefore, if they are dead there is no stress so no slime. I've never tried this, but heard it somewhere.

Do northerns get oily like salmon and trout when you smoke them?

I smoke a lot of Northerns skin down in the smoker.
Desliming a northern is easy, just mix 1 cup of vinegar to one gallon water. (Rinse off/Then put in brine)

Scale them first, then wash them in fairly warm water or salt water have used both.

I had some moron tell me at Devils Lake once ice fishing that if you kicked the fish in the head it would basically turn off the slime mechanism in the fish.............man that guy was stupid and the worst part was he was part of our group fishing.

This is the best thing I've read today. Thanks.

Don't practice until you get it right, practice until you can't get it wrong.
